Our task was to change the conventional manner of pickling while respecting the traditional elements of our century old recipes. It proved to be cumbersome. Our delicate recipes required the utmost attention to detail and pickling became an art we laboured to master. The challenge wasn't just the pickles in itself, but demonstrating the value of the brand in its entirety. We needed to establish our legacy, by adapting to the future, while respecting our rich history.
