COOKING
The Pickling Company is immensely passionate when it comes to cooking and food. We respect and believe in our recipe, at the same time we delicately modify it for the modern palate.
We slow cook in small batches never exceeding 2 kilograms per batch. The total cooking process takes upto 4 to 6 hours. To extend the shelf life we marinate our meat in vinegar, which also adds a tang to the overall flavour of the pickles.
We only use top quality, premium, earth friendly local ingredients for our pickles and we ensure good hygiene remains a priority. Hairnets and gloves are worn by our staff at all times whilst preparing these delicious pickles.
PRESERVATION
Once our pickles are cooked, we store them in large glass containers and expose them to sunlight for 15 to 45 days. This is a very important step, one which many pickle makers tend to avoid.
Pickles have a long shelf life because of the presence of high amounts of sodium and oil, which help in preserving the food for a longer time. To maintain this, we must keep it in an air-tight container, and expose it to direct sunlight to let it ferment properly. If we let moisture in the pickle, it will get spoilt. The Sunlight allows the flavours to infuse allowing us to create a perfectly balanced, delicious jar of pickle for you.
PACKAGING
We have diverted a lot of attention and care towards packaging. We ensure that our products are packed with utmost care. All our jars are sealed and wrapped in bubble wrap and packed in Jute pouches before being put into 3 ply carton boxes for shipping. Hence we minimise spillage and breakage.
